I am sharing the basic
recipe below, but you could also add a couple of sun - dried tomatoes, or drizzle some oil mixed with a teaspoon of
basil pesto on top with a sprinkling of lightly toasted walnuts.
Tip: Using only
basil in
pesto can be pretty pricey and if you're like me and grow herbs in your garden or in pots around your house, you don't want to take a whole bunch for just for one
recipe, so using spinach and other herbs helps!

Pesto Recipe: 3/4 cups sun - dried tomatoes (I used the kind that's not packed in oil, but use whatever is readily available), 1/3 cup packed
basil, 1/4 cup walnuts, 1/2 cup shredded parmesan, 1/2 cup olive oil, 1/3 cup filtered water, 1/2 teaspoon kosher salt.
This
pesto has a lovely mix of
basil, kale, and spinach, and because this
recipe was is Fall - and Halloween - inspired, pumpkin seeds were thrown into the mix.
