Similar to South Carolina, the folks hereabouts think that mustard and pork (ham) go pretty well together, so they stir up a
batch using ketchup, vinegar, brown sugar and mustard to
make a
thicker yellow sauce.
Tried out two different recipes to
make homemade sprinkles - the first of which I saw here, the second being a bit more of a royal icing... The first

I had to continue simmering this

thick enough to be considered pancake syrup even after I took an immersion blender to it.

thick water» with more corn starch, fennel and sage and a little syrup... as I was
making the patties, I did 1/4 ″ patties, spooned some of the
thick water on one, then put one on top, then wrapped in parchment and steamed them for about 25 minutes... this gave a satisfying squirt of «greasy» flavor in every bite and they stayed moist even after sitting for a while.
I added a little tahini in my 2nd
batch to
make it a little
thicker but I honestly enjoyed it both ways!!
