The mushrooms are sautéed in
batches in a little bit
of butter and olive oil until most
of them are nice and
brown and starting to wilt.
I, too, made this bread tonight — in fact, a double

of which is baking right now — and I
browned my
butter, but used two tablespoons
of Korbel brandy instead
of bourbon, which we don't have.

batch of these, half lemon - lavender w / poppy seeds, the other half
brown butter w / toasted chopped walnuts.
In the second
batch instead
of 1 1/2 cups
of white flour I used 3/4 cup white flour and 3/4 cup wheat flour, I used coconut oil instead
of butter and instead
of all white sugar I used 1/2 cup white sugar and 1/2 cup
brown sugar.
