My first
batch (banana muffins) didn't turn out well (flat), but I re-read the
recipe and decided my starter wasn't thick enough to
begin with.
The great thing about this
recipe is that you can make a huge
batch of «muffins» at the
beginning of the week and refrigerate them until you want to eat them again (which will probably be every morning, because they're so dang good).
Vegan overnight oats are one of my favourite quick, easy breakfast

beginning of the week in about 15 minutes and have breakfast ready to go for the next 3 - 4 days!
You can even whip up a big
batch of a
recipe at the
beginning of the week and have it ready for easy mornings.
