I just
made these and I had the
batter all
over my fingers from spreading it in the pan... I licked my fingers completely clean!
Make sure to cut down to the bottom of the
batter and lift it up
over the rest of the egg whites.

This is super easy to
make — pretty much bung your left
over sweet potato puree (or pumpkin puree) along with everything else into the blender and whizz into a
batter.
I have
made many variations of zucchini fritters
over the years, but prefer this recipe best which adds a little baking powder into the
batter which I find keeps the fritters light and tender.
I'm so glad to see I'm not the only one who gets waffle
batter everywhere — every time I
make waffles I try so hard not to overflow the iron or get it all

One thing that I miss is hot fudge pudding cake (a kind of «floating island» dessert where you
