Because
the batter sticks to the paper, you wind up with less than adequate muffins.

I used cupcake
papers and they
stuck badly
to them so just wanted
to advise anyone else who wants
to sub whole wheat flour for almond meal
to maybe spray your cupcake
papers with cooking spray before putting the
batter in.
To fill the muffins, a small amount of pumpkin
batter is placed in a greased muffin
paper (it does
stick).
Into a nonstick muffin tin, divide the
batter into 8 tins, being sure
to spray the tin first or use
paper liners
to avoid
sticking.
Repeat with the remaining
batter, stacking the crepes with parchment
paper in between
to prevent them from
sticking together; you should have 8 - 10 crepes.
I got about 16 portions out of the
batter which was great, but I made the mistake of using
paper muffin liners and they completely
stuck to the
paper.
The
batter didn't seem as thick as it should be, and the night I made them, I tried one and it
stuck so much
to the
paper that it wasn't worth the effort of prying it loose.
The
batter also wasn't too sticky where it would
stick to the waxing
paper.
