I have been working on a
bean free
chili recipe and I think I
got it down so we will be making lots of that!
Pinto
beans are a favorite for many

gets its hot flavor from tomatoes,

My first taste of spicy as I know it today was when my Mom sent me to the corner grocery to

bean chili, and I paired it with some grilled chicken I made on Monday during my meal prep to bump up the protein.
We don't eat a lot of meat and also keep a kosher kitchen, so here are my go to's these days: three
bean veggie
chili (inspired by whole foods — GREAT leftover food); roast chicken (Ina's); stir fries with tofu or chicken (super into cabbage and you can
get it to taste like moo shoo with the proper sauces); roasted brussel sprouts with barley, cranberries, walnuts, and some goat cheese depending on who you are; grilled chicken (breasts... I know they're not your thing).
Since this three
bean chili takes only forty minutes total, you still have plenty of time to
get whatever work you have done.
1/4 cup Olive Oil (I used a little less) 2 cups Onion, chopped 2 Red Bell Peppers, chopped 6 Garlic Cloves, minced 2 tablespoons
Chili Powder (I only used 1 tablespoon) 2 teaspoons Dried Oregano 1/2 teaspoon Cayenne Pepper 1 1/2 teaspoons Cumin 3 (15 - ounce) cans Black
Beans 1 (16 - ounce) can Tomato Sauce 1/2 cup Water (I swished it around the tomato sauce can to
get every last drop)
1 tablespoon vegetable oil (coconut oil) 1/2 onion, thinly sliced (1 cup) 1 red jalapeno
chili, thinly sliced 1/2 green bell pepper, thinly sliced 1/4 lb green
beans, cut into 3/4 inch lengths 3/4 lb ground beef (grass fed, if you can
get it) 1 1/2 tsp.
It doesn't
get any easier than this 3 -
bean vegetarian slow cooker
chili.
This vegetarian
chili is loaded with fresh vegetables, pinto
beans, and quinoa and
gets its zing from poblano chiles.
I'm going to try to
get that delicious butternut squash black
bean chili posted for tomorrow....
