beans, so you can have your
chili and eat it

I was going to make white
bean chili for Dinner Club, but realized
too late that I didn't have any
beans on hand, so turkey burgers was served instead.
1 pound dried small white
beans 8 fresh Anaheim chilies 1/4 cup (1/2 stick) unsalted butter 2 large onions, chopped 1/3 cup all purpose flour 4 cups low - salt chicken broth 1 1/2 cups half and half 1 1/2 cups 2 % milk (whole milk or 1 % would work
too) 4 cups shredded cooked chicken 1 tablespoon
chili powder 1 tablespoon hot sauce 1 tablespoon ground cumin 2 teaspoons salt 1/2 teaspoon pepper
But we also like to eat it in rice bowl form, with black
beans, avocado slices, some fresh cilantro, and even a few pieces of sweet pineapple, and if you can find some
chili - lime cashews those are pretty great sprinkled over the top
too!
Other than the turkey
chili that I ate almost every day (which was really more
beans than turkey), I didn't eat meat because it was just
too expensive.
I would love a black
bean chili and the great northern is calling my name
too.
If the
chili seems much
too thick, add a little of the
bean cooking liquid.
1 tablespoon olive oil 2 cloves garlic, minced 1 onion, chopped 1 teaspoon rosemary / oregano / thyme veggies (carrot, courgette, pepper, mushroom, spinach, brocoli, tomatoes,
chili, olives) 200 grams pasta (I used spelt spaghetti, but GF brown rice pasta is great
too) 750 ml vegan vegetable stock 1 can lentils /
bean of choice

Chili Lime and Real Cheesy versions (most kids floated towards the Real cheese Puffs vs. the spicier version, though grown ups liked the spicy ones).
The spaghetti sauce was made in the kitchen there
too, we saw it later in the week when they added spices and
beans to make the
chili (unfortunately they added the noodles as well).
Ingredients: 1 Tablespoon olive oil 1 medium yellow onion 1 tsp dried marjoram 1 tsp ground cumin 3/4 lb ground buffalo (I've also used ground dark turkey meat, it's great
too) 1 1/2 Tablespoons
chili powder 1 bay leaf 1/2 Tablespoon unsweetened cacao powder 1/2 tsp salt 1/8 tsp (or a few shakes) cinnamon 14 - oz can whole tomatoes with their juice 1 1/2 cups beef stock (low sodium or no salt added) 4 oz tomato sauce (I used some organic canned) 1 - 2 cans small white
beans, rinsed and drained

Beans, or Queso Cashew «Cheese» for other recipes
too.
