DRIED
BEAN CURD STICKS are my favorite form of protein easily found
in most Chinese supermarkets and a cheap protein source.
My favorite low - fat, low - sodium recipe is PUMPKIN AND
BEAN CURD STICK CURRY OR STEW — For 4 people — Fry 1 large chopped onion and 6 chopped cloves of garlic
in barely 2 tbsp safflower oil till translucent.
Soak the
bean curd skins (use the sticks)
in plenty of warm water for about two hours.
High
in protein and low
in sugars and unhealthy fats, soybeans and the
bean curd produced from them have long been lauded as a sound substitute for animal proteins.
Thus
in tofu and
bean curd, these enzyme inhibitors are reduced
in quantity, but not completely eliminated.
Thus fermented products such as tempeh and miso provide nourishment that is easily assimilated, but the nutritional value of tofu and
bean curd, both high
in phytates, is questionable.
Tofu,
bean curd and tempeh have a disagreeable texture and are too bland for the Western palate; pungent and musty miso and natto lose out
in taste tests; only soy sauce enjoys widespread popularity as a condiment.
Soya
beans and it's
curd (tofu) are very high
in omega 3's, as are other
beans, although not as high as soya since soya is very fatty.
The main use of red yeast rice
in Chinese cooking is adding flavor to
bean curd, also known as tofu.
Like red meat,
bean curd is high
in iron too.
At a later date, possibly
in the 2nd century BC, Chinese scientists discovered that a puree of cooked soybeans could be precipitated with calcium sulfate or magnesium sulfate (plaster of Paris or Epsom salts) to make a smooth, pale
curd - tofu or
bean curd.
