I recently made a delicious celeriac and white
bean puree from Terry's new cookbook.
The white
bean puree from Huckleberry is soooo good.
Not exact matches
And not just any soup but I'm using the rest of my
beans from last weeks black
bean puree.
For those of you who are curious, I made note of everything in my freezer: five types of chili powder; three serrano chile peppers; kaffir lime leaves; white popcorn kernels; cooked chickpeas, mung
beans, flageolets, and marrow
beans; lots of Massa brown rice; pasta sheets; unidentified cookie dough # 1; unidentified cookie dough # 2; cooked posole in one bag, red sauce in another (for this); 2 pounds wild huckleberries; 1 sweet whole wheat pastry tart shell, round; 1 sweet whole wheat pastry tart shell, rectangle; 6 small spelt - semolina tart shells; small bag of ginger juice; 2 pounds Straus European - style butter; plenty of this green soup - I
puree it and make a tart filling; one pack of three - grain tempeh; a stack of frozen rye crepes; cooked farro, pound of green
beans; pack of expired acai juice; 8 Parmesan rinds, and roughly five pounds of cherries
from my sister's tree.
Since the «creamy» texture of this soup comes mainly
from pureeing the
beans after cooking them down, you get twice as much goodness
from the base of the soup.
Once the tomato
puree is nicely sautéed, add the boiled rajma / kidney
beans and the spice paste and keep stirring on high heat until oil starts separating
from the spices.
Peach Raspberry Hand Pie: made
from scratch raspberry
puree, sweet peaches, cinnamon and sugar, salted caramel sauce, served warm with a scoop of vanilla
bean ice cream.
In addition, we packed the following: Bottled

from organic supermarket) Gazpacho (another great item

from our favourite organic bakery Figs Brazil nuts and pecans Ground flax seeds Wakame White

12 ounce dried cannellini
beans, picked over and rinsed 2 tablespoons extra-virgin olive oil 4 or 5 cloves garlic, minced 2 medium stalks celery, very thinly sliced, plus any leaves
from the head of celery 3 leeks, white and light green part thinly sliced (about 3 cups) Pinch of red pepper flakes 2 large heads escarole, well - washed and chopped 4 cups vegetable stock (recommend Imagine No - Chicken broth) 1 15 - oz can tomatoes, with juice (not
puree), well chopped (or use Eden brand diced tomatoes, which are already finely chopped) 1/2 teaspoon freshly ground black pepper 3 tablespoons chopped fresh basil (optional) 2 tablespoons chopped flat - leaf parsley (optional)
So if you're suffering
from wisdom tooth surgery you can safely and happily slurp on one of my favorite creamy
pureed soups, otherwise you've got my all time favorite quinoa black
bean pumpkin soup to sample first!
I love making risottos with farro too, and that would definitely benefit
from the
bean puree!
They have a home made filling w / beef, salsa,
pureed kidney
beans, cheese, cilantro, etc. - basically any leftovers
from dinner the night before
The sauce is made
from a
puree of black
beans, garlic and roasted peppers then topped with a combination of fresh spinach, green onions, more roasted peppers and black olives.

Lift the lid
from time to time, both to stir (the
pureed beans may want to stick) and to add more boiling water as needed.
To keep him
from gaining too much weight (he's 27 lbs) we add no - salt green
beans or canned pumpkin
puree to his kibble per our Vet's suggestion so he had more to eat but wasn't consuming too many calories.
