At the beginning of the week I make a black
bean salad — 2 tins (rinsed), tbsp.
I love being able to flip open to a date close to today's — July 24th, let's say — and imagine him hustling together a dinner for six: French
beans and goat cheese, cold wild salmon with mayonnaise, boiled new potatoes, a green
salad with warm peas, and a trifle so good, he writes, «that I wish I had made two, the last one to eat alone, in my bathrobe,
at breakfast.»
If I'm not going out to lunch with my husband (we're pretty good
at day - dating) you'll find me in the kitchen adding odds and ends from the pantry and fridge for a cobbled together
salad of leftovers, canned
beans and anything with a pucker.

A while ago my friend Amanda (it's her amazing and florescent carrot butter on that little whole grain toast in the background) introduced me to a pre-made quinoa tabbouleh
salad at Costco, it had extra bells and whistles, like mung
beans and brown rice, but it was lacking something so I decided to re-create it
at home.
And my face contorted a bit
at the thought of this savory paste of ground sesame seeds which I use to make a lovely
salad dressing and roasted zucchini dip, a cousin to hummus without the garbanzo
beans.

I'd also encourage you to dress the
salad a bit more heavily than what you see in the photo - I always worry about over-dressing things before taking a photo, and now that I'm looking
at the shot, the
beans up there are looking a tab bit naked.
I try to focus on eating 2 ounces of nuts and seeds daily, have
beans in
at least one of my meals and always try to eat dark leafy greens - whether in my green drink, in a
salad, or mixed in with my meals.

Darker - colored «desi - type» garbanzo
beans appear to have thicker seed coats and greater concentrations of antioxidants than the larger and more regularly shaped cream - colored garbanzos that are regularly found
at salad bars and in canned products.
Listed on the sheet, amongst other things were: 1) eat a big
salad at least one time per day, 2) eat
at least two fresh fruits each day and 3) eat

At the appropriate hour before lunch service, a kitchen worker begins assembling the
salad bar using the fresh vegetables as well as any number of other food items: canned kidney
