I made a white
bean soup on Sunday but none of us were that wild about it so tonight I decided to try this recipe with the leftovers... it was a HIT!

soup on its own, but bulked up with a pillowy gnocchi, white
beans and wilted greens it becomes a meal unto itself.

I made it with what I had
on hand: tomato paste (had an already opened can that needed to be used up), two cans of black
beans, a roasted and pureed butternut squash and no «finishing» vinegar... The addition of the Sherry to the
soup is phenomenal!

soups make up a large part of my meals.
My ideas for variations are pretty simple — like subbing green
beans for the fennel, adding some tomato to the broth for a semi-Provencal-y
soup, or serving the whole business
on a piece of toast, adding a parmesan breadcrumb, and sticking it under the broiler for a minute.
In the spirit of fall... I soaked some white
beans on Friday night thinking it would be a lovely Saturday
soup that could simmer all day.
I use canellini
beans for this
soup because they are mildly flavored and take
on the flavor of the
soup.
Bread
on top of the
bean soup only compounded the unnecessary carbs / starch.
I made it up
on a rainy SF day with a pot of white
bean soup while
on the rebound from the flu.
If you make a hearty option like a
bean soup or chili, serve
on a sweet potato, in a grain bowl, or over spaghetti squash for some diversity.
