A while ago my friend Amanda (it's her amazing and florescent carrot butter on that little whole grain toast in the background) introduced me to a pre-made quinoa tabbouleh salad at Costco, it had extra bells and whistles, like mung beans and brown rice, but it was lacking something so I decided to re-create it at home.

Amongst my plate: tostones [Cuban fried plantains with black beans + sour cream], tofu nut balls + tofu tahini dressing, vegetable potato latkes, lemon + herb shrimp, fava bean spread, caprese toasts, dolmas, puff pastry and filo dough - wrapped asparagus, and a piece of corn on the cob [for the sake of summer].

I use my slow - cooker to soak the beans, (with a quartered lemon, a handfulmof scallion bulbs, salt, and a splash of toasted sesame oil in the water) on high for an hour, and then on warm for.

No Noodle Pad Thai 1 daikon radish or zucchini 4 medium carrots — peeled 4 cups mung bean sprouts 4 spring onions (scallions)-- finely chopped (I used chives here) 1 package firm tofu — cut in cubes 1 handfull cilantro leaves (I used basil because I had beautiful basil on hand) 2 tablespoons black or tan sesame seeds — toasted, plus extra for garnish 4 slices of lime — to serve

Enjoy this slow - cooked alternative to canned baked beans for breakfast or brunch, served on toast or with eggs.

Eat a complete protein for breakfast (animal sources: eggs, meat, raw or grass - fed dairy, fish or a combo of two incomplete proteins like rice and beans, nut butter on toast, etc..)

A versatile and delicious vegan French toast based on garbanzo bean flour.

Make a big pot of these comforting, tomatoey beans and eat them throughout the week: on toast, with fried eggs, over cooked grains, in tacos — the possibilities are endless.

With a base of pinto beans, it's a higher - protein variation on avocado toast that makes for a quick dinner sandwich.
