No longer will I be able to eat a strawberry again and not think of this yogurt bowl
because roasted strawberries are my newest obsession.
You can skip roasting the strawberries if you like and just use jam in the center instead, but I beg you not to
because roasted strawberries have the ability to, oh, you know, change your life and all — ladled over ice cream, swirled into muffin batter, layered with yogurt and granola, blended into smoothies, spooned over pancakes.
Because roasting the strawberries means you end up with a good bit of liquid (and because I didn't want to dilute the strawberry flavor too much) I decided not to add any additional water to mine, but to blend in a bunch of ice instead.

because these are bursting with nutty flavor from the whole wheat, the fruitiness of all those
roasted strawberries, and that sweet touch of maple, they certainly don't leave your taste buds lacking.
In fact, you could probably get away with using
strawberries that aren't the sweetest,
because these are lightly sweetened with some maple syrup and
roasted!
The texture is spot - on, the flavor is sweet in that light way that quick breads should be, there's this amazing blend of vanilla beans and vanilla sugar and vanilla extract that works wonders, and there's juicy
roasted strawberries, blackberries, and raspberries in every bite
because they're amazing.
We'll be celebrating Valentine's Day with dinner at home (I'm thinking steak + mashed potatoes +
roasted veggies + homemade chocolate covered
strawberries)
because you won't catch us dead out on one of the busiest restaurant nights of the year.
I could've eaten in plain, straight from the jar, but I opted to throw in some
roasted strawberries because they're awesome.
The only thing I did differently from Joy was not
roast the
strawberries because I'm incredibly impatient and needed the cake right away.
