because sweet potato skins tend to be fairly ratty looking.

Because it gets stored in fat just beneath the
skin, eating excessive amounts of carrots,
sweet potatoes, pumpkins or cantaloupe can impart a lovely sallow yellow color to your
skin.
You'll be able to tell them apart from yams or traditional
sweet potatoes because the
skin is purple and the inside is white.
And the reason they're my favourite part is
because of the mini
sweet potatoes I used, which have a thin
skin that doesn't require peeling.
