Beets are a great source of vitamin C and many vitamins and minerals, making them a healthy addition to your basic
hummus recipe.
Surprisingly, the garlic and tahini overpower the
beet flavor, so you don't taste them much if you are worried about a strong
beet flavor in this
hummus recipe.

Roasted cauliflower, red pepper, sweet potato and
beets have all made their way into my
hummus throughout the years, and it's tasted good pretty much every time —
hummus has a very forgiving and highly customizable
recipe.
For this roasted
beet hummus, I decided to try my hand at making a

recipe below, but when I'm short on time (I know all you mommies out there feel me on this one), I'll just snag the Trader Joe's brand
beet hummus and mix in some superfoods like I did right before this shoot.
When roasted,
beets become subtly sweet and tender, making them an excellent paleo - friendly substitution for garbanzo beans in
hummus recipes.
