A friend suggested coconut milk from a can so I tried that, and even chilled
it before adding it to the dry ingredients plus fat solid.
Vanilla, Berry, and Bourbon: Mix 1 teaspoon vanilla bean paste in with the buttermilk
before adding it to the dry ingredients, add 1 teaspoon to the filling, and use bourbon in place of the lemon.
My food processor is too small, so I beat the eggs

before adding to the dry ingredients) and used the boiling water method.
If using cold / room temperature coffee, whisk it into the other wet ingredients

For those who can tolerate white flour: I
added 1 level tablespoon of self rising flour
to the
dry ingredients before mixing and this small amount of SR flour gave the pancakes a little more body and rise without changing the wonderful flavor.
