Serve on its own, or over a bed of greens, in cup - shaped leaves of lettuce or radicchio, or
in bell pepper halves as suggested.
1) Wash, de-seed and cut bell peppers into halves 2) Pre-heat oven to 180 deg celcius 3) Line a baking sheet with parchment paper and place
bell pepper halves face down on the baking sheet, and let them roast in the oven for 20 - 30 minutes 4) While bell peppers are cooking, dice onion, and chop spring onions and stir fry them in a pan, until onions turn soft and slightly caramelized 5) Add in minced beef to the onions, and using a wooden spoon, move beef around until browned and cook.
Lay one shrimp half, one slice of avocado, 1/4 cup of the noodles, two
bell pepper half slices and a sprinkling of basil into the middle of the wrapper.
Baked bell pepper half stuffed with freekeh (toasted green wheat), pinto beans, corn and cheese, served with baby spinach salad topped with fresh blueberries and dried cherries.
** Instead of using two
bell pepper halves, feel free to use one whole bell pepper.
Fill
each bell pepper halve with the ground turkey - sweet potato mix.
Then I spooned the mixture into
the bell pepper halves and put them in the oven to bake.
Spoon about 2 tsp of the mixture into
each bell pepper half.
Stir in remaining 3
bell pepper halves, onion, and next 7 ingredients (through adobo sauce).
Thinly slice 3
bell pepper halves, and chop 2 bell pepper halves; set aside remaining bell pepper halves and chopped bell pepper.
Scoop the quinoa mixture into
your bell pepper halves.
Stir in 3/4 cup of grated cheese and cilantro.Fill
each bell pepper half with a heaping 1/2 cup quinoa mixture.
Place
bell pepper halves on a baking sheet and fill with meat - bean filling -LCB- about 1/2 cup per bell pepper half -RCB-.
Place 1 clove of garlic in
each bell pepper half, drizzle with 1 tbsp olive oil, and place in the oven for 25 minutes *.
I divided this filling mixture between the twelve
bell pepper halves, which I had arranged on a baking sheet.
Once
a bell pepper half is stuffed, place it in a baking dish and top it with some of the shredded Gouda cheese.
