Around here we
like eating our blackberries straight out of hand, but also enjoy them on salad, made into a syrup or jam, in breakfast cookies and in quick breads and
muffins and in Lemon
Berry Donut Holes.
It is
like eating the ice cream version of a
berry cake or
muffin only the recipe is made purely from fruit.
I enjoy pretty much any fruit in
muffins, but I especially
like berries because they «explode» when you bite into them and that's kind of awesome.
Fresh
berries, peaches and melons are in the farmer's markets and make great dishes,

Several months ago I made Flourless Banana
Berry Muffins from oats instead of flour and I really
like them, so I went back to that recipe for inspiration and used old fashioned oats ground in the blender in place of flour.
The cookies also have added ground flax seed, which is packed with fiber and lignans, kind of
like these Waffles and these
berry protein
muffins.
Well, if you're anything
like me, you stick your head out the door
like a meerkat to inspect said sunshine before retreating in to the kitchen to make these

Muffins.

muffins) 1 pkg Active Yeast 1/4 tsp salt 3/4 tsp baking soda 1 tsp xanthan gum 3/4 C warm water 1 tsp honey 2 Tblsp almond oil.
Every once in a while, even if I'm making these
muffins when blueberries aren't in season (
like right now, in March), I'll stumble upon a couple of well - priced pints of fresh
berries in the market.

I truly love to make Cupcakes and
muffins so I wanted to find some new recipes to try out just
like this one for
Berry Banana Cupcakes, so delicious...
It's one of those classic combinations for me, kind of
like my thing with chocolate and cherries (see this smoothie or these energy bites), or my undying love for chocolate and
berries (ahem — this tart) or lemon and
berries (
muffins, cake, you name it).
The
muffin is not over sweet and I really
like how the subtlety of the flavour allows the
berries to shine.
Fuel for a high energy day with a combination of protein and carbohydrates,
like Greek yogurt with
berries or hard boiled eggs and a whole - wheat English
muffin.
Although these
muffins may resemble their traditional counterparts, they're made of nutritious grain - free ingredients
like yogurt, almonds, eggs and
berries.
Instead of missing out on these foods and their important nutrients, I use the frozen variety (frozen
berries are a delicious addition to oatmeal) or alter my recipes to include produce that is in season (
like these Pumpkin Walnut -
Muffins).
