After dinner I munched on a handful of almonds, chocolate
chips, raisins, and
coconut along with Trader Joe's dried mango, which is basically the
best thing that ever happened to me.
Add in the
coconut flour and the chocolate
chips and mix
well with the liquid ingredients.
It freezes really
well, lasts wrapped really
well, and can be fancied up with chopped nuts, chocolate
chips,
coconut, seeds, anything you like really!
You can add
coconut, peanut butter, or more chocolate
chips and make your own flavor combos as
well.

I've made those 3 - ingredient ones a bunch, but they are
better with a smaller volume of brown sugar (or sucanat, or
coconut sugar) and with the addition of chocolate
chips.
2 cups blanched almond flour — I use Honeyville brand, it works the
best 2 cups rolled oats (not instant)-- certified gluten - free if you are intolerant 1 cup fresh pumpkin puree (canned will also work) 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup grapeseed oil (olive oil, melted
coconut oil or ghee would also work) 1/2 cup organic local honey (maple syrup would be great here, too) 1 large farm fresh brown egg (or egg replacement of your choice) 1 1/2 teaspoons ground cinnamon 1 teaspoon ground nutmeg 1 teaspoon vanilla extract 3/4 cup raisins (dried cranberries or mini chocolate

I'm trying to get off wheat and sugar, so I've been loikong for a starter recipe using almond flour, this one turned out pretty
well, despite a lot of substitutions I used half chickpea flour, I added cocoa instead of chocolate
chips, subbed earth balance for the fat and sweetened with a little

I probably don't need to say this, but these can be made into any type of
chip cookie you want — add chocolate
chips, or butterscotch, or peanut butter
chips, or add some chopped walnuts or toasted
coconut or chopped heath bars or sprinkles — they will be
good no matter what the mix - ins are.
The chocolate
chips worked really
well with the melted
coconut oil!
The
best part of summer is the peak availability of so many fruits; it means you can make a variety of sweet treats with little or no added sugar, such as street food - style mango and orange cups with
coconut chips, watermelon aloe juice, and all kinds of paletas.
And instead of the
good old crust, it is topped with some maple - spiced, praline pecans, and toasted

best to use solid or semi-firm
coconut oil... I found that using butter that was too runny affected my traditional chocolate
chip cookies, so I imagine it's the same with the
coconut oil.

The maple almond granola uses things like almond oil and,
well, almonds,
coconut chips and pure maple syrup, so it's really not cheap, you know?
I would highly recommend adding
coconut chips, it goes so
well with the berry flavor.
2 1/4 cups old fashioned oats 3 cups almond milk, regular cow's milk is
good as
well 1/4 cup
coconut milk, if you don't have any use regular milk 4 tbsp maple syrup 1 1/2 cup carrots, grated 3 tsp cinnamon, more if you like 1 tsp ground nutmeg 1/2 tsp ground ginger 1/3 cup raisins 1/3 cup walnuts, chopped 1/4 cup flax seed meal, optional, wheat germ or oat bran will also work
well 1 tbsp chia seeds, optional 1 tbsp
coconut chips, optional
Be sure to store your homemade chocolate
chips in a cool place (if you used
coconut oil they will need to be stored in the fridge or freezer) If made with cacao butter and maple sugar crystals they will hold up
better at room temp, though I still store the bulk of them in the fridge.
In place of the chocolate
chips, I would use a mixture of
coconut oil, cocoa powder and raw honey or stevia to make them sugar - free as
well.

And I used Dang's sea salt caramel
coconut chips to finish off these cupcakes but if you would rather toast
coconut shreds, those would totally work as
well.
