Many of our meals were enjoyed with the sand between our toes and we had the opportunity to enjoy fresh caught local fish, ceviches,
the best rice and beans and sweet plantains I had ever had, and even a Caribbean curry!

We enjoyed a traditional Colombian plate with

and only) course, I: - used brown
rice - upped the
rice to 1.5 cups - kept the
beans the same (another half can would have worked as
well and I kinda wish I had done that)-2 jalapenos - chipotle chile powder instead of regular - used 2.75 tsp salt.
Serve this tasty veganized version of a classic teriyaki chicken over a bed of
rice,
and with a side of sautéed green
beans for a
well - rounded meal.

and well - liked by kids (
and adults) everywhere.
In my week there (the first half of spring break), I found this to be fairly true — when we weren't eating Americanized burritos or (surprisingly
good) pizza, the majority of our meals were platters composed of white

I typically buy

and it was so

Here's a super-quick lentil fix if you don't have time to cook — heat up a can of Progresso Lentil Soup (which is
good, as far as canned soup goes), strain the liquid out,
and pour the
beans over some cooked brown
rice.
I think this recipe will adapt
well to different veggies,
beans and rice.
For example,
rice and beans, a whole grain salad or a vegetarian pasta dish are
good choices.
