I've made a
vegan french toast before using
well - mashed
banana [+ milk / cinnamon] instead of egg.
Not as
good a flavor as
vegan French toast with a
banana base.
The recipe calls for mashed
bananas to be mixed with zucchini and carrots as
well as
vegan staples like chia seeds using either water or whichever milk substitute you prefer to blend it all in with rolled oats.
I threw in Clif Bars — which are accidentally
vegan and could be eaten by all — and brought
bananas, Mary's Seed Crackers with some hummus, and Kettle Brand Sriracha Chips, which are
vegan but I'm not advocating that they are remotely
good for you.
You could possibly try replacing them with a mixture of mashed

bananas and 3 «chia eggs») but I can't guarantee the loaf will still turn out the same, as these
vegan egg substitutes tend to only work really
