This is
the best vegetable soup recipe I've ever tried.

vegetables, fresh herbs and beans are quickly turned into a warm and comforting

Another mix

Cook until soft, about 10 minutes / Add chopped tomatoes and cook about 5 minutes / Add cheese rind (in cheesecloth if you wish), cranberry beans and water to the pot / Cook until beans are about halfway cooked, about 20 minutes / Add potatoes and cook until beans and potatoes are tender / In a large skillet heat more olive oil and saute chard stems until tender / Add zucchini and beans, salt
well and saute a few minutes, just until tender / Add chard leaves, salt again and saute until wilted / Remove the cheese rind from the tomato
soup base and add
vegetables / Garnish with fresh basil (or pesto), freshly grated cheese, salt and pepper and if you have it, a big piece of burrata is absolutely divine.
Our spicy and creamy
vegetable soup doesn't just taste

well but the asparagus doesn't, so I omit any garnish pieces of the

Well, I tell yeah, this easy to make French onion
soup requires no ramekins (which I know a lot of people don't own), it's made with a rich
vegetable broth instead of beef broth, and it uses a combinaton of cheeses that work amazingly together, which create a flavor that is out - of - this - world!
Most times that I make
soup it's either because I have fresh
vegetables that need to be used up before they wilt and go bad — or — I'm too busy to make a fancier meal that day and just want a one pot wonder to fill me up with
good tasting,
good for me ingredients.
I also used an opaque
vegetable stock on one attempt and it changed the color of the
soup as
well.
If you hadn't already noticed, I like to include raw green leafy
vegetables in all of my meals (smoothies,
soups etc.) as greens are so
good for you.

Vegetable Soups from Deborah Madison's Kitchen) 1 3/4 lbs rutabagas (1 truly enormous one, or 2 merely large ones) 2 - 3 tbsp duck fat or lard or butter (I used half duck fat, half butter) 1 big pinch dried thyme 1 bay leaf 2 medium leeks (sliced, white and pale green parts only) 4 - 6 C chicken stock 1 smoked chicken breast (honestly, a plain one is probably fine)(shredded) 1 - 2 big handfuls finely chopped fresh dill 1 bunch celery (the more leaves, the
better) 1 child - sized handful salted capers (rinsed and coarsely chopped) ground green peppercorns to taste (honestly, black pepper is probably fine)(lots!)
