I made a pot of turkey sausage chili this week, but I love a good hearty vegetarian chili since we eat vegetarian most of the time... this chili looks perfectly cozy for these frigid temperatures we've been having here lately... ditto on the fries and guac!
I had a crown of broccoli in the fridge and one vegetarian sausage link that I wanted to use up so I added it into the recipe as well.
You can use a good quality vegan or vegetarian sausage, turkey or chicken sausage to add flavor.
If you're not sticking to a vegetarian diet, 8 ounces of cooked ham, sausage, prosciutto, or bacon would go very well in this stew and easily served on the side.
I used Lightlife vegetarian ground sausage in place of the actual sausage - and it was really good.
