Why this didn't occur to me sooner is beyond me — this is just an adapted version of the Best Ever Zucchini Muffins I make on the regular!

I was looking for a carrot zucchini muffin with almond flour and couldn't find one, but this recipe worked well subbing the zucchini for the pineapple.
