Having said that, I think these are probably
better for you
than most of the regular
muffins that one might get at a grocery store, school / office cafeteria or at a coffee - shop.
Question - I made these tonight, and they were
good, but more dry like a biscuit, rather
than moist like a
muffin.
This stuffing is slightly more labor intensive
than other recipes, since it has the added component of roasting vegetables, but they add the
best flavor and texture to these
muffins.
So much
better (and prettier)
than a standard
muffin:).

For me there is nothing

muffins at all; and while these gluten - free buttermilk pancakes taste slightly different
than the ones I used to make with all - purpose flour, I have come to like these even
better.
I just love me a
good muff, and you're right about needing to eat more
than one in a sitting... there's just no such thing as a safe
muffin in my house.
You pour an egg into the ring, you lift the ring expecting a
muffin size fried egg... no, it sticks and you end up with a sloppy egg mess worse
than frying the egg alone and placing it on a
muffin...

We use a standard - sized
muffin pan when baking this recipe; if you were able to get 18
muffins out of this recipe, it's possible that each
muffin well was slightly less full or you used a bit more apples
than what was used to develop the recipe.
I find this type of almond flour gives the
muffins a
better texture and works
better than almond meal in this recipe.
While the berries pop in all the
best ways, the almond butter helps to create a more complex flavoured
muffin than traditional raspberry varieties.
And really with the fibre from the pumpkin and the little fat, it really is

than many of the
