Pork tenderloins are one of my favorite proteins
for many reasons: they're quite mild, so they are very much a blank canvas and

bit more about beating the butter / shortening
for 3 - 5 mins, make sure you don't overbeat the batter, which is standard with most cakes.
I haven't tried it in this particular recipe, but it's
worked as a sub
for me in similar ones, although I sometimes need to use a
bit more - usually just a tablespoon or two.
