I don't typically go 100 % coconut flour in a recipe, though I have had some success with it, and though it was an attractive thought for me with these paleo crepes, I decided to actually use tapioca flour as a main flour with just a little
bit of coconut flour instead.
Not exact matches
Follow everything in this recipe until the very end:
instead of coconut flour and dark chocolate chips, add the same amount
of Raw Cacao Powder (plus a little almond meal to thicken it up a
bit) and White Chocolate Chips.
I used unblanched almond
flour from Trader Joe's,
coconut oil
instead of grapeseed oil, added 1/2 tsp xantham gum so they'd stick together, and a
bit of amaranth
flour to thicken it up.
I made a few changes: I used all plain
flour (that's all I had), sheep's milk yogurt (I bought it to try and it's weird / gross so I made these to use it up), a little
bit of coconut oil in replace
of about a quarter
of the butter because I didn't want to open a new packet
of butter (I'm just lazy:P), and I used 4 small apples
instead of 2 big (gasp!).
To thicken these oats up a
bit, I used ground chia seeds
instead of whole (which adds a better texture, in my opinion), a touch
of coconut flour to thicken it up and add a cake - like texture (almond meal would also work), a little
bit of vanilla, a dash
of cinnamon, some NuNaturals pure stevia (without any fillers — just stevia), and finally, creamy non-dairy unsweetened almond milk.
