Both are lighter than oat or chickpea flour, which I use in a lot of other baked goods, but I avoided here because they can give a little bit more dense texture — still amazing, but not what I was aiming for with these dark chocolate cupcakes.
I looked for them awhile back but couldn't find them at any of the big grocery stores we go to around here, so I settled for buckwheat cereal, which is just the groats ground down a bit more, but not all the way to flour.
I also added all of the flour, slowly, to the bowl and kept just a bit for kneading.
you might try substituting a bit of soya flour for the eggs.

The question of thickening sauces is one of the hurdles I face every time I put up a recipe post — it's become a bit of an internal struggle (as seen with last week's beef and broccoli stir fry recipe, in which I hesitatingly called for a teaspoon of flour as a thickener) because while adding a bit of flour or cornstarch to a larger recipe may not drastically impact the carb count, it does complicate the consistently Primal message I try to convey.
You may dust a bit of flour or you can use marble surface for easier rolling.
