The main change I
made was to
make the recipe vegan, but I also added a
bit of coconut oil to
help it melt better inside the pop tart.
So yum —
made it with broccoli and added a
bit of onion and garlic - sauteed eggplant because it needed to be used up plus it
helped stretch the broccoli.
You can also add in a big spoonful
of almond butter to
help make it a
bit more rich.
What a great combination
of ingredients — I had to modify a
bit based on what I had (honey instead
of agave and no hemp seeds)-- but these turned out FANTASTIC, and even my toddler who

make them thought so!
You might notice a tiny
bit of a grainy texture due to the nature
of the ingredients, but I found soaking & blending like above really
helped to
make a smooth ice cream that we are truly enjoying!!
You can really
make any variation - this year I
made this recipe but istead
of orange extract I added a generous
helping of ground ginger, added a tiny
bit of water to
make the mix even more fudgey, rolled them into balls and then dusted in extra cacao.
