Would this work since the ratios of egg / fat / and cheese are correct or does the cinnamon and small
bit of liquid stevia extract toss a wrench in it?
I added a little
bit of liquid stevia, and I couldn't be happier with the way it turned out.
I used a small amount of maple syrup, a smaller amount of raw honey, and
a bit of liquid stevia.
The tiny shreds are perfect in my Organic Oats with Unsweetened Organic Coconut Milk and
a bit of liquid Stevia for sweetness.

You can add chopped fruit and if you feel it needs a
bit of sweetening, you can use
liquid stevia drops — even flavored ones if you'd like!

bit heavy on the sugar for my taste: reduce it by using half the amount, and 10 drops
of liquid Stevia instead — or try pure Xylitol (low GI birch tree sugar) in place

For those who are interested in substituting
stevia for the agave, I just made this recipe and used four dropper - fuls
of vanilla
stevia in place
of the agave (and added a tablespoon
of honey to add a
bit more
liquid) and baked them.
I omitted the
stevia and added a
bit of regular vanilla extract, and I first squeezed out the
liquid from the grated zucchini, but otherwise stuck to the recipe.
I like pure organic
stevia in some applications (like coffee and tea where you just need a
bit), but it doesn't provide the right texture in this recipe, so it's important not to sub the maple with that without adding some other sort
of liquid, which I haven't experimented with.
We are GAPS / anti-yeast, so will have to try with the green
stevia powder and a
bit of extra
liquid.
