I used brown rice, unsweetened chocolate almond milk (didn't have coconut milk), vanilla / cinnamon and
bit of maple syrup as sweetener.

The spices make them taste really festive, while the mix
of honey, coconut sugar and
maple syrup make them extra sweet and indulgent, which is great,
as you don't want to spend Christmas feeling too healthy and a
bit deprived!
I have just cooked the blueberry muffins
as you say they are like a liquid batter but they haven't turned into muffins they are just blueberry slop in bottom
of muffin tins.I don't see how these can turn into muffins when they are just pure liquid and there is nothing in the recipe to bind them together.The only different ingredient I used was rice milk
as didn't have almond milk and actually put less
maple syrup in
as didn't have full amount so the recipe should have been even runnier.Am feeling a
bit frustrated
as the ingredients aren't cheap.
When cooked, they're my perfect simple, slow Sunday morning meal,
as take they quite a
bit longer than rolled to cook on the stovetop — up to 30 minutes — but when topped with chopped nuts and drizzle
of maple syrup or honey, yummmmm, they're seriously worth the wait.
I did sub coconut oil for butter, coconut oil is so easy to sub 1:1 and has so many good
bits for you Also, I had no
maple syrup on hand so just used the same amount in honey although next time will use
maple as I love the flavour
of maple in muffins and cakes.
But our
Maple Nut Bar is every
bit as delicious
as that stack
of pancakes and
syrup, but far better for you.
I didn't add any extra sweetener
as I found the apples and the raisins sweetened it enough, but my husband put
maple syrup on his, and we both had it topped with some raspberries and a little
bit of warmed up cashew milk.
I also used a
bit less than 1/2 a cup
of sugar to 2 1/4 cups
of oat flour,
as I didn't have
maple syrup at hand.

of coconut and buckwheat flours, added in chopped dates, extra carrots, extra extra pecans and a little extra
maple syrup, milk and vanilla extract (
as the batter became a
bit too sticky to work with).
You can use
maple syrup instead
of honey for the chocolate recipe, especially if you've never made raw chocolate before
as it is a little
bit easier to mix with the cacao butter.
The yogurt and sticky stuff will come out easily once blended with the milk and you won't have to scrape it out
of your measuring device when you're ready to move it; just use yogurt > milk > everything else
as your order for adding stuff in; you can shake your table spoon around in the milk to make sure you get every last
bit of honey or
maple syrup out.
Also not a fan
of stevia... you can cut down on the
maple syrup a
bit (I always taste and add
as needed).
The muffins are not very sweet, with just a hint

as a quick breakfast, snack - on - the - go, and / or healthy dessert.
We tried to keep it
as «clean»
as possible, added just a little
bit of maple syrup for sweetness, and lots
of fresh and dried fruit.
