My father took a
bite of one in the 70's and thought it was a horrible way to use
pasta (cold) and thus I never grew up even knowing what a
pasta salad was since my mother only made what he liked.
Notes: Keep
pasta al dente because they will soak up a
bit of the sauce.

Love quick and easy
pasta... And getting a good
bit of flavor from peppers as well as tomatoes is such a simple way to vary it!
Place in a large bowl (you don't want to crowd the
pasta or it will clump and stick), toss with a
bit of oil, and cover with plastic wrap.
The final step in my
pasta - boiling method
of covering the bowl
of still - warm cooked
pasta with plastic wrap allows the
pasta to steam a
bit and trap just enough more moisture to stay soft.
So aside from the little
bit of unknown, this recipe was a cinch, and also, Parrish's brand new favorite meal: Cheesy Chicken Enchilada
