My question is if the sauce is drizzled between cake layers (i.e. cake,
salted caramel buttercream, layer
of salted caramel, repeat) and the cake is then refrigerated and brought to room temperature, would the
caramel be so hard that it would be difficult to eat (i.e.
biting into crunchy / hard
caramel)?
I found some
of my
caramels have a
bit more
salt or cinnamon but not really a problem haha!
I couldn't find
caramel bits or melts, so I made a bourbon
caramel sauce and added some lightly toasted walnuts with sea
salt for a
bit of crunch and a salty note atop the frosting.
I tried a raw
salted caramel cookie
bite at a local store and after a quick peruse
of the ingredient list, I knew I could make these easily and more cost effectively at home.
Because I've tasted the other side, the one where you take that milk in your fridge that you needed to use up anyway, the sugar that's already in your pantry, a
bit of salt, the smallest snippet
of vanilla bean and maybe a cinnamon stick, if you so desire, and boil them together until it smells like the heavens exhaled in your kitchen and the mixture becomes the most complexly flavored thick copper
caramel with a deliciousness will bring tears to your eyes.
The salty date
caramel is just that: dates and a
bit of salt... and a splash
of vanilla.

Instead
of using plain chocolate I tried out Green & Blacks new dark
salted caramel chocolate to add a
bit of decadence to the chocolate cups — the burst
of salted caramel works perfectly with the sweet pumpkin filling.
It looked beautiful, tasted very chocolaty, the
salted caramel was mild (I might add a
bit more
salt the next time) and the cream was a nice addition to break up the richness
of the cake and ganache.
Dense and chocolatey with a
bit of crunch from the hazelnuts, each brownie is also covered in a natural, thick
salted caramel topping for extra indulgence to make these a real treat!
I mean seriously, when you put two kinds
of chocolate, cookie butter, cookie dough,
salted caramel, and
bits of crushed up cookies throughout, there is no way things can go poorly.
Blend it all up with a little
bit of sea
salt and vanilla bean powder (because yum), and you have a silky sweet vegan date
caramel sauce.
