We are off to the lake which always means some great lunches in Paso and undoubtedly
a bit of wine tasting!

For over a thousand years, Communion, the Eucharist, or the Lord's Supper has usually entailed little more than a
bit of bread and a tiny
taste of wine or grape juice.
Prep: Finely chop 1 medium shallot, 2 — 3 T / Zest one lemon and chop finely / Cut lemon in half for squeezing / Measure 1/4 C white
wine (optional) / 2 T butter / 1 t salt and pepper or lemon pepper to
taste / Measure 2 C Arborio rice / Bring 6 cups
of liquid to a light simmer — this can be plain water, any broth, clam juice, tomato juice, or a combination / Pieces
of seafood like clams, halibut, salmon, shrimp — which are optional, can be chopped into
bite - sized pieces in advance, or while rice is cooking / Add pieces
of almost any vegetable — some will need to be par - boiled or sautéed before adding about mid-way through cooking time / I like to add rehydrated wild mushrooms and their broth, chopped kale or chard, thin spears
of asparagus when in season.
I get a
bit giddy when results
of a major
wine tasting are released, I can't help it.
Every
bite is filled with the
taste of wine.
Here is the final recipe from our
wine tasting — an appetizer
of sausage stuffed mushrooms — the perfect
bite - sized
taste to accompany our fruity and delicious Barriosa Sombrero Rojo Rioja
wine.
Add a
bit of acidity if it
tastes too rich — a splash
of white
wine vinegar or a good squeeze
of lemon will add a brightness to the soup without making it
taste too acidic.

Dress the cauliflower and other ingredients with abundant olive oil, a
bit of white
wine vinegar and salt to
taste as you would a regular salad, mixing well but taking care not to break up the flowerets.
Ingredients: 3 tablespoons olive oil or bacon drippings 1 cup thinly sliced onion 1 teaspoon salt 1 1/2 cups thinly sliced leeks — white and light green
bits only 3 tablespoons minced fresh garlic 1 cup thinly sliced celery 1 cup thinly sliced carrots 1/2 cup thinly sliced fresh shiitake mushrooms 1 pound boneless rabbit meat 1 tablespoon each fresh minced rosemary leaves, fresh thyme leaves and minced fresh sage leaves 1 teaspoon smoked Spanish paprika 1 cup dry white
wine 1 1/2 -2 quarts
of rabbit stock (or chicken stock, if you must — or water, if you haven't anything else) 1 1/2 pounds freshly shelled horticultural beans the meat from the rabbit stock, if you have any 1 bay leaf salt and freshly ground pepper to
taste 2 tablespoons minced fresh herbs — I used rosemary, thyme, sage and flat - leaf parsley — for garnish
One
of my favorite preparations I
tasted in the week prior was a super simple crostini spread with a little
bit of fromage blanc and topped with a spoonful
of cherries cooked in red
wine — simple, but so delicious and a perfect jumping off point to today's creamy polenta.
Chicken with Oyster Mushrooms, Portobellos, & Napa Cabbage (adapted from Every Grain
of Rice by Fuchsia Dunlop) 3 skinless chicken breasts (~ 1.5 lbs without the bone), thinly sliced ~ 1 lb mushrooms (we used 2 big portobellos and 3 big oyster mushrooms), thinly sliced 1 small head garlic (about 6 large cloves), thinly sliced about the same quantity ginger, thinly sliced 1 napa cabbage (a
bit on the small side), cored, quartered, and sliced into ~ 1/4 ″ thick pieces safflower oil (or any other neutral oil with a high smoke point) 2 scallions, green part only, thinly sliced 1 tsp salt more salt and freshly ground black pepper to
taste for the marinade 1 tsp salt 4 tsp Shaoxing rice

I was a
bit disappointed with the
taste of the sauce in my coq au vin, but I must admit I skimped on the quality
of the
wine under the false impression that it makes no difference.
