Imagine an
ice cream without any gluten, dairy, soy, nuts or any
of the most common allergenic foods, yet the
ice cream is every
bit as sweet and creamy.
These little sweet
bites are a great example
of the versatility
of vegan treats — perfect swirled in
ice creams, perfect on top
of smoothies or chia puddings and just as perfect on their own, too.
After the
ice cream turns thicken and creamy like half - stiffens, add tablespoonful
of peanut butter or Nutella or both one at a time until
bits and pieces
of peanut butter or Nutella or both is mixed into the
ice cream mixture, then continue freezing until
ice cream is ready.
Then, once cooled, you literally tear it up (note the bowl
of cake
bits above), knead in some chilled coconut milk (yep, that's that
ice cream looking blob on the cake
bits), and roll into
bite - sized balls (see above).
A side
of ice cream doesn't hurt one
bit, either!
The
ice cream has a deep chocolate - y flavor with a hint
of pure peppermint extract, and lots and lots
of crumbly Thin Mint cookie
bits swirled throughout.

Ice -
cream in July is becoming a
bit of a tradition.
The
ice cream does take a little
bit of time (not work time - sitting time) so plan ahead, but make sure you let the
cream sit overnight for the flavors to blend and allow time for the corn to sit.
James Martin's glazed doughnut and homemade malted milk
ice cream takes a
bit of extra effort but is well worth the results for a perfectly spongy doughnut
You can spoon it over a scoop
of vanilla
ice cream, drizzle over freshly made waffles, use it to dunk pancake
bits cooked in ebelskiver pan or use it in whatever else you like!
Since this was a little
bit more icy than
ice cream, I couldn't bring myself to crown it worthy
of my third favorite food group..
I may or may not have a few
bites of bambleberry
ice cream (this exists & it's yes, it's better than sex).
The picture above is right out
of the freezer, with soft - serve texture — I love it this way but it doesn't really show the chunky little
bits of chocolate peanut butter that are scattered throughout the
ice cream.

I found it hardens quite a
bit when you store it in the freezer, but I ate most
of it directly out
of the
ice cream maker so that didn't matter much.
Blend the chilled mixture until very smooth (unless you are okay with
bits of chia seeds in your
ice cream) and transfer to a shallow air tight freezer safe container.
