After reading some of the replies on here and researching it a
bit more I think the biggest problem was that I
covered it
in an airtight
container and it was
in a cold (air conditioned room).
I like to
cover with the chocolate then cut into
bite size piece, put
in a plastic
container to keep from drying out and refrigerate.

in a secure, level spot
in the freezer / Freeze for 1 — 2 hours / Remove from freezer and scrape, smash and stir mixture with a fork, breaking into small icey
