I have gone for the classic dark chocolate here, I really like the slight
bitter flavour of the chocolate with the sweet mint of the sweets.
Not exact matches
I am not a fan
of dark
chocolate and this had hints
of that
bitter type
of flavour, however, it was just subtle enough for me to actually enjoy.
The
flavour was more lemon zest than lemon juice, with the almost -
bitter citrus edge playing well against the muted golden syrup, custard, and clotted cream notes
of the white
chocolate itself.
The carob gives a real richness to the compliment the cacoa and the maca has a «malty»
flavour which (depending how much you use) makes for a less
bitter chocolate more
of the «milk
chocolate» variety.
I didn't want to add too much extra sugar to balance out the
bitter raw cacao powder, so these swoonuts are more
of a milk
chocolate flavoured donut — perfect for those who don't like a heavy dark
chocolate flavour.
The first
flavour, chilli and sea salt, works really well with a
bitter dark
chocolate base; the second
flavour, raspberry, pistachio and cardamom, also works well both with the bitterness
of a dark
chocolate base, however it also goes beautifully with the vanilla tones
of a white
chocolate base.
I find with brownies (and
chocolate baked goods
of any kind) the most important part is finding a delicious tasting cocoa powder - it should smell and taste good straight out
of the packet (though it will be
bitter, obviously) and then it will
flavour your brownies brilliantly.
I think there is a slight hint
of the olive oil
flavour in these brownies; it brings out the
bitter element
of the dark
chocolate and cacao.

The texture
of the paste is smooth and creamy like, while the
chocolate hides its dark and
bitter flavour in the deeper layers
of the paste.
There were different
flavours of chocolate pastes, one
bitter, the other more sweet or spicy even.
But there is nothing better than the
bitter sweet indulgent
flavour of dark
chocolate melting on your tongue.
