I stuffed the poblano peppers halfway first with black beans after mashing them and then added the grilled corn on top.

Right with my favorite Mexican fusion ingredients of black beans and sweet potatoes is just where it belongs, however, this stuff was so good, I can't say with any certainty that it won't end up on sandwiches, salads, ice cream... time will tell.
