The adult buffet was impressive, roast sweet potatoes, stuffed peppers, striploin,
blackened catfish, salmon, stirfries, soup, salad bar, desserts — there was NOTHING deep - fried on the adult buffet which is such a refreshing change to the usual crappy fried buffet fare.
The Cajun seasonings I used were basically the same seasonings as I used for
my Blackened Catfish.
Nothing says «Cajun» quite like succulent, pan-seared,
blackened catfish.
Or an étouffée just needs a little GF flour to become the perfect gluten free side to
blackened catfish.
One of my favorite meals that I ate in MS was «
blackened catfish with crawfish étouffée».

I'm not sure that my
catfish necessarily came out «
blackened», but it sure came out flavorful and yummy and fall off of the fork tender!
