As far as what we eat is a wide range of vegetables (not including white potatoes), a wide range of whole fruits, 90 cc mix of no salt tree nuts, (that's my approximation of Dr. Weber's handful of nuts), wide variety of beans and legumes usually about 1/4 cup dry, whole grains example brown rice pasta, some organic whole grain bread, usual breakfast organic old fashioned rolled oats with soup spoon of dried wild blueberries, 1/2 a banana, 12 no salt almonds with skin, a little almond milk.
For dinner, 3 cups of ww pasta with a mushroom tomato sauce for dinner with a large 5 cup romaine lettuce salad with my home - made silken tofu with Dijon mustard and balsamic vinegar dressing, an ounce of toasted almonds and 1/2 cup of broccoli sprouts; for lunch a 16 ounce bowl of 15 bean soup, a slice of Ezekiel bread, 8 ounces of carrots and a large apple for lunch; and for breakfast a banana, blueberry, strawberry smoothie made with soy milk and ground flax seed along with a 2 cups of steel cut oatmeal cooked in water with an ounce of raisins and a tablespoon of brown sugar.
I'm not a bread eater and I usually eat eggs and spinach for breakfast but about two days per week I eat Kashi Go Lean with blueberries.
