boiled Yuca + add puréed green plantain (maybe 1 / 2plantain it works as an egg subst.)

To do my fries I usually thaw the
yuca out on the counter then
boil it for about 6 - 7 min (the
boil is less that it would be for fresh
yuca).

That is still one of my favorite ways to eat it; however fresh
yuca isn't always available, and it takes a decent amount of time to
boil it.
