You may possibly have to shave a slight edge with a sharp knife on the exterior /
bottom of the pepper so that it has a flat edge to rest on.
Spoon about 1/4 to 1/2 cup of the squash into
the bottom of each pepper and then top them off with the ground beef.
Spoon 1/4 ricotta into
the bottom of each pepper.
Carefully trim
the bottom of the peppers so that they sit flat, but don't cut all the way through.
If there are holes in
the bottom of your peppers, you can place a small piece of bread on the bottom to prevent leaking.
If the peppers do not stand up straight, cut a small amount off
the bottom of each pepper so they sit evenly.
Once all peppers are stuffed, wrap 1 slice of bacon around each one, leaving the ends of the bacon on
the bottom of the pepper.
