used to love
bran and banana
muffins, when I was a kid.
The recipe I have
used for
bran muffins has no sugar but my husband says it is not sweet enough.
These
bran muffins also differ from most in that we are
using unprocessed wheat
bran instead of a commercially made
bran cereal.
If you've never made
bran muffins before then it's important that I note how crucial the first step is which is soaking the wheat
bran in the milk of your choice (we always have almond milk in our fridge so that's what I
used).
300 ml fat free yoghurt, thinned with 15 ml milk 1 large egg 80 ml oil (such as vegetable, safflower, sunflower or olive oil) 50 grams lightly packed dark brown sugar 1 teaspoon vanilla extract or zest of citrus fruit of your choice 90 grams oat
bran 125 grams spelt flour (can substitute plain flour) 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1/4 teaspoon table salt several teaspoons sugar — for topping the
muffins 3/4 to 1 cup chopped mixed fruit (just about anything but citrus or pineapple will work, I
used 10 strawberries but have previously
used frozen raspberries and blueberries successfully)
I love
using oat
bran in
muffins to keep them high in protein and fiber, but also light and fluffy.
I can't want to read about the
bran muffins and I still want to try
using Raisin

Or you can switch this up and cook oat
bran for breakfast and
use rolled oats in cookies or
muffins.

Muffins 2 - 3 c flour, depending on how wet the veggies are 1 cup oatmeal 3/4 cup oat
bran 3/4 cup ground flax 3/4 cup wheat germ 1 cup brown sugar 2 t baking soda 1 t baking powder 3/4 t salt 1 T cinnamon (If
using pumpkin puree, you can switch this to pumpkin pie spice and add a little ginger, clove, and / or nutmeg and allspice.)

muffins and brownies, as well as in hamburgers, sausage rolls etc. just as quick oats can.

use whole - grain, whole - wheat flours, and add 2 - 3 tsp of unprocessed wheat
bran, or substitute oat
bran for one - third of all - purpose flour in homemade bread,
muffins and other baked goods)

So I haven't actually tried these banana
muffins yet because I don't have
bran, but I tried
using your boiled date / baking soda technique in another recipe (to make bean blondies) and it worked like a charm.
As someone with a super-sweet tooth, and a long - time fan of a ridiculously fattening banana
bran muffin recipe that I've
used for years, I was sceptical on how these would turn out, but I have to say, they weren't bad at all!
