Also, i used the Coconut
Secret brand of coconut flour (I read your disclaimer regarding different brands not working with your recipes after the fact), so this may be the reason for the texture being off.
I tested out Arrowhead Mills Organic Coconut Flour for this recipe because they had it at Sprouts and I wanted to see how it compared to
other brands of coconut flour I used.
1/2 c sifted coconut flour (see notes above
about brands of coconut flour) 1 tsp baking soda pinch of sea salt 5 eggs at room temperature 1/2 c maple syrup (or honey if on GAPS) 4 Tbsp organic, grass - fed butter 1/4 c fresh squeezed lemon juice zest of two lemons 1/4 c homemade cultured cream (or high quality yogurt — see notes in post) 2 Tbsp Raw Apple Cider Vinegar 1 Tbsp poppy seeds
It COULD be that you didn't weight it... as mentioned measurements can be off depending on
what brand of coconut flour you have... but it may just be that it's not your tastebuds «thing!»

Hi Jayne - The instructions have been amended after some feedback -
Some brands of coconut flour are way more firm and need more pumpkin puree and / or dairy free milk.
PLEASE NOTE - I've had feedback regarding different
brands of coconut flour and some having their cake bars too crumbly - If this is the case, please add more pumpkin until a «dough» is formed - It should be soft like the pictures show.
It could also be
the brand of coconut flour used.
Strange / off -
brand of coconut flour or butter (still shouldn't affect things THAT much though) 5.
* Depending on
the brand of coconut flour, you may need more applesauce.
:D You might want to add an extra egg depending on the size of the eggs you have (pasture eggs from farmers aren't always the same size as supermarket ones), and
the brand of coconut flour (some are dryer than others).
I think
the brand of coconut flour you use affects the recipe.

this brand of coconut flour.
I know it also depends on
the brand of coconut flour you use, so maybe you have one that is extra fibrous?
I almost think it's
the brand of coconut flour, and I think what I'm using now is Coconut Secret brand (I dumped two kinds in one canister at one point, but I think that's what is left).

I see on your amazon store that you have several types /
brands of coconut flour, I remember reading a while back in a comment or something that some coconut flours don't end up cooking the same.
