It's Christmas
Day here in New Zealand and we are having this for
breakfast, absolutely love it and our fave topping is
toasted coconut flakes, pineapple chunks (fresh or tinned) and a drizzle of maple syrup..
We will be offering all -
day breakfast 7am - 10 pm, with lots of chia pudding, acai bowls, porridge, coyo, avocado on
toast and more.
Most
days my
breakfast is something quick like an english muffin with almond butter, avocado
toast, eggs, yogurt with fruit, oatmeal or a smoothie, depending on my mood and the season.
I feel nostalgic for the good old
days when avocado
toast was something novel, a little

Honestly, it was my first time using a countertop toaster since back in my childhood
days when this is how I made my buttery, cinnamon

But as much as I enjoy my morning meal, I'm not someone who can eat the same thing
day in,
day out and, probably unlike most of the population's
breakfast eaters (in the UK at least) I rarely eat cereal or
toast.
Slice and eat fresh out of the oven or
toast them the next
day and slather with ricotta, honey and nuts for a filling
breakfast.
I rarely eat
toast too — in fact, pretty much never for
breakfast (occasionally at other times)-- and would take these over cereal any
day They look lovely!
And then, no less than five minutes later, I'm slinging cereal and cutting fruit into itty - bitty pieces and trying to calm the usual morning chaos so I can please, please just have one little sip of coffee before this
day starts and suddenly it's 8 a.m. and the kitchen looks like it exploded and everyone else has eaten
breakfast but me and that's when my old reliable pal peanut butter
toast makes its appearance.
The bread is best eaten on the
day it's made, but after a
day or two it is still good
toasted for
breakfast or tea.
My AM
breakfast sandwich that also makes for a great snack any time of the
day stemmed out of my boyfriend wanting some
toast with almond butter and jam.
Smoothies, smoothie bowls, tofu scramble, muesli, porridge, fruits,
breakfast burritos, quesadillas, pizza from the
day before, lasagne from the
day before, anything from the
day before, sandwiches,
toasts....
