Unfortunately while they don't complain
about having veggies with our nightly
dinner, they rarely ever eat them
for breakfast or lunch.
Mix that vacation with a HOLIDAY vacation, and basically all I think
about is what I'll have
for breakfast, where we are going
for lunch, is there a dessert place near by, how
about a holiday
dinner, and will there be a chocolate fountain that I can lay under before I go to bed?
I usually start my bread after
breakfast and let it rise
for multiple hours, and usually by the afternoon it's ready to go, (when I'm
about to make
dinner.)
Occasionally I make a meal that I can't stop thinking
about — a meal that I want to eat
for breakfast, lunch and
dinner.
Is it wrong that I haven't even eaten
breakfast yet, but am thinking
about what I want
for dinner?
Yesterday was
about as homespun as they go;) Ate
breakfast at home, went to church, came home
for leftovers, went to an open house, took Maggie to the park, made some fun food items, cleaned the house, worked on laundry, switched summer — > fall / winter clothes, and made
dinner!
Granted, we often make bacon to go with our whole wheat waffles so I'm not going to pretend that when we do
breakfast for dinner it's all
about eating healthy.
While I did come home that afternoon with a very successful Secret Santa Swap gift of coloured striped straws, we may not want to talk
about how much sugar I consumed... Good thing this pie crust and the accompanying filling is nearly healthy enough to eat

about how much Elsa love pesto; same here — my four year old daughter can have pasta with pesto

A typical full day of eating
for me looks like:
Breakfast: Spinach, Mushroom, Onion and Tomato Frittata... sometimes with bacon or homemade sausage Iced Coffee with coconut milk Lunch (this is usually my largest meal of the day): 4 - 5 ounces of protein (turkey burger, pulled pork, chicken thighs, ground buffalo), roasted veggies and sometimes a sweet potato or butternut squash Snack: apple with almond butter or a handful of macadamia nuts
Dinner: A large salad with all kinds of raw veggies (cucumber, celery, carrots, cauliflower), avocado or olives, usually a lighter protein like grilled chicken breast, salmon or shrimp This would represent a full menu... I would say I hit this
about 4 - 5 days a week, other days I may omit the snack or keep the snack and omit a meal, if i do that though I would add a bit of protein with it.
The great thing
about this recipe is that it's perfect
for breakfast, lunch, or
dinner.
