I had fabulous authentic socca in Antibes a couple years ago but with no wood oven in sight nor
broiler in my oven, I'm afraid homemade won't quite be the same.
To cook, heat
the broiler in your oven.
Sadly, I don't have
a broiler in my oven but this technique certainly sounds perfect.
You could also cook the chicken under
the broiler in your oven.
The next morning: Turn on
the broiler in your oven.
Preheat
the broiler in your oven and spray olive oil on a large baking dish covered with foil.
Use a kitchen torch or like we used to do back in the day, use
the broiler in your oven with the pie set a good 6 - 8 ″ away from the flame and keep an eye on it... it can go from brown to totally burnt in seconds!!!!
On a baking sheet, roast the poblanos and jalapeños under
the broiler in the oven turning often until the skin is completely blistered.
Place the skillet underneath
the broiler in your oven for 60 - 90 seconds until omelet starts to firm and veggies soften.
Use a kitchen torch to brûlée or slide under
the broiler in the oven.
If you're going to serve it after the second day, I would make the cake and leave it covered... then 20 minutes or so before serving, throw it under
the broiler in your oven for a few minutes or until the topping starts to sizzle slightly.
Shuck the ear of corn and grill until bubbly and golden, or under
the broiler in your oven, rotating every few minutes.
NOTE: if you do not have a torch, then use an oven - proof dish or a baking sheet and place the meringue under
the broiler in your oven until it browns (about 2 to 3 minutes).
Start
the broiler in the oven.
Place under
the broiler in your oven or toaster oven for 2 - 3 minutes until cheese is melted.
An even greater concern is using Teflon under
a broiler in the oven or on the grill.
To open the clams: with the oven rack located in the middle, turn on
the broiler in the oven.
Once completely cool (you can speed up the process by putting them in the fridge for a bit), lightly sprinkle brown sugar on the tops of the ramekins and then place under
the broiler in the oven watching carefully until sugar caramelizes on the top.
