flour, like
buckwheat or brown rice.
I usually make an American style pie (since Im an American living in the UK), apple
pancakes with
buckwheat flour and baked apples (but not this way).
I am pretty sure they were 100 %
buckwheat, too, so those who are celiac or have other gluten /
flour sensitivities and allergies could enjoy delicious and very nutty flavored
pancakes!

I used a mix of half
buckwheat flour and half spelt, but you could swap out your favorite
flour for the spelt, or go with all
buckwheat flour for some super hearty and gluten - free vegan
buckwheat pancakes.
That said, you can introduce it as second
flour and it still has an earthy taste but it's balanced nicely;) I do this combo a lot as I really like the health benefits of
buckwheat in these
