recipe — I imagine it would be quite dense and not have the loaf like flavour because of the lack of

I have also modified the
recipe to use
Buckwheat flour instead of the whole wheat and I believe this makes it gluten - free!!
I've never had that with the
recipe - sometimes the
flour sinks to the bottom of the mixture a little so the first one can be too runny so make sure to stir just before pouring or you could try adding a little but more
buckwheat flour!

In testing this
recipe I have used freshly ground toasted
buckwheat for my
flour option, though any
buckwheat flour should work.

buckwheat with all - purpose
flour, so they're never

Usually when I make pancakes I use a mix of different kinds of
flours (or I use this pre-made mix) but I really wanted to come up with a vegan, gluten - free pancake
recipe that's super simple and just uses
buckwheat flour.
I had to make a few adjustments based on what I had but otherwise followed the
recipe: — wholewheat
flour instead of
buckwheat — mix of walnuts and sunflower seeds as I didn't have enough walnuts — 3 dates and 1.5 tbsp maple syrup Both my husband (who has a huge sweet tooth) and my 2 year old love them!

recipe, if I wanted to replace 2 cups of white
flour, I'd use 1/2 to 3/4 cups
buckwheat flour and 1 to 1 1/4 cups whole wheat
flour.
